冷凍保存 低溫雖然會加速澱粉的老化,但當溫度降低到攝氏0度以下時,澱粉的老化作用則會大大減緩,也因此可以冷凍更多時間,但需注意只有不含餡的麵包才適合冷凍保存。
經過冷凍取出的麵包,建議放在室溫等候約30分鐘回溫,之後再把微濕的毛巾或濕紙巾覆蓋在麵包上頭1分鐘,等麵包吸收到一些水分,再將烤箱轉攝氏180度預熱5分鐘後,放入麵包烘烤90∼120秒,口感就能恢復約8成。
